I loooove these Simple Banana Pancakes! Only three ingredients and minutes to make, make them a staple in my diet. They will be sweeter with ripe bananas and I even find them sweet enough that I don’t even use maple syrup. Instead I sprinkle them with a bit of cinnamon for a delicious flavour!

Simple Banana Pancakes

Serves 2

Ingredients

  • 2 Banana (ripe)

  • 4 Egg

  • 1 tbsp Coconut Oil

Directions

  1. In a bowl, mash the bananas very well until quite smooth. Add the eggs and beat gently with a fork for about 30 seconds.

  2. Heat coconut oil in a skillet over medium heat. Add 1/4 cup of the batter at a time to form pancakes, cooking for about 1-2 minutes per side.

  3. Serve with a sprinkle of cinnamon or a drizzle of maple syrup if desired.

Variations

Add blueberries or dark chocolate chips into the batter.
